(A participant favorite from my detox recipes!)
Serves 4
- 1 head broccoli, cut into florets and stems thinly sliced
- 2 Tbsp olive oil
- 1 yellow onion, diced
- 2 garlic cloves, thinly sliced
- 1 15 oz. can cannelloni or other white beans, drained and rinsed
- 2.5 cups veggie broth
- salt and pepper
- 1 Tbsp pine nuts, toasted
Steam broccoli until tender and bright green, about 3 minutes. Let cool slightly; reserve ½ c florets for garnish
Heat oil in medium pot over medium heat. Saute onion and garlic until translucent, about 6 minutes. Add beans and broth and bring to a simmer. Remove from heat and add broccoli.
Puree in batches (food processor or blender) until smooth. Season with salt and pepper. Garnish each serving with florets and pine nuts.
