Anyone who knows me knows how much I love kale. I eat it nearly every day because it totally rules. Kale is one of the healthiest and most nutritious of the green leafies. It’s high in Vitamins A, C, and K. It has powerful anti-inflammatory and antioxidant properties, is great for our bones and eyes, strengthens our nervous, cardiovascular, and reproductive systems, AND aids our bodies in the detoxification process. Whoa, right?! If you’re not into kale yet, it make take some experimenting to find some recipes that you dig.
This is a really easy, all-raw salad that I love. With the addition of red pepper, lemon juice, and raw garlic, it’s heaven for your immune system. It takes like three minutes to make, so give it a try!

Ingredients
- one bunch of kale, stems removed and leaves chopped every-which-way (use your stems for smoothies, veggie broth, or compost!)
- 1/4 tsp salt
- 3 tsp extra-virgin olive oil
- juice of 1 lemon
- 1/2 red bell pepper, chopped
- 2 tbsp raw pine nuts
- 2 tbsp chopped black olives
- 1-2 cloves garlic
- ground pepper to taste
Place kale in a mixing bowl along with the salt, olive oil, and lemon juice. Massage these ingredients well with your (very clean) hands. Toss in pepper, pine nuts, olives, and garlic. Season with ground pepper and let it sit for at least 10 minutes to marinate. This salad will keep up to 3 days if stored in a airtight container in the fridge.
