Serves 6
Dressing (put all ingredients in a bowl and whisk away)
- 2 Tbs. extra virgin olive oil, plus more for drizzling
- ½ cup fresh orange juice
- 1 large shallot, finely chopped
- 3 Tbs. olive oil
- 2 Tbs. sherry vinegar
- 2 tsp. Dijon mustard
- 1 tsp. raw honey
Salad (then put spinach in a bowl with this other stuff, then toss it all with the dressing you just made. Easy peasy!)
- 3 navel oranges, pith removed and sliced
- 10 cups baby spinach (9 oz.)
- a bunch of sliced radishes
- 3 avocados, peeled and sliced
- ¼ cup pumpkin seeds or sunflower seeds, raw or toasted
- salt and pepper to taste
