Serves 2
1 bunch of kale, spinach, or Swiss chard (or you can mix them up)
1 tomato, diced
½ bell pepper, diced
1 clove garlic, minced
1 ripe avocado, peeled and chopped
2 TBSP olive oil, maybe a bit more
½ – 1 lemon, juiced (to taste)
pinch of sea salt, black pepper, cayenne pepper, and/or cumin, whatever you like!
Toss all ingredients in a bowl, massaging avocado and greens as you go to soften.
