People are always asking me about salads. Do I have to eat them? (Yeah.) They get so boring — what to do? With a little creativity and seasonal inspiration, you can create healthy and satisfying salads in a matter of minutes. Here’s one that Nick and I have been happily chomping on lately.

Ingredients
Serves 2
mixed salad greens
1 big ripe tomato, diced
1 ear of corn (cooked or raw), kernels shaved off
1/2 an avocado, sliced
1/2 c of black beans (cooked)
handful of raw pumpkin seeds
1/4 of a red onion, diced
dressing: 2-3 TBSP olive oil, juice of 1/2 a lime, handful chopped fresh cilantro, pinch of cumin, salt and pepper
I know you can figure out the rest, so just go make it before summer’s end!
