Makes 9-12, depending on if you eat some of the batter first like I did. And takes about 5 minutes! These are surprisingly healthy and can be a great energy-booster.
7 Medjool dates, soaked for 30 minutes and pits removed (save soak water!) – regular dates are OK, but you might need a few more
1/2 c raw nuts (cashews and/or walnuts), soaked or dehydrated
2 Tbsp raw cacao (or cocoa powder)
1/2 tsp cinnamon
1/2 tsp vanilla extract
pinch of salt
1 Tbsp cacao nibs, carob or vegan chocolate chips (optional)
handful organic, unsweetened, shredded coconut (optional)
1. Put everything except chocolate chips and coconut in a blender or food processor. Blend until roughly combined, adding a very small bit of date soak water if needed. (You want it to be dough-y, not liquid-y.)
2. Put mixture into a bowl, add chocolate chips, round into balls by the spoonful and place on plate covered with parchment paper.
3. Roll each one in bowl of coconut to coat. When all are coated, put in fridge for at least an hour, then freak out with deliciousness.
